Italian Style Veggie Bowl
I did a post before this one of Tom Avery what a 71 year old raw vegan fruitarian eats in a day.
I was inspired to made a veggie/non sweet fruit meal kinda like he does in the video.
I have been struggling a bit and haven't been doing to well with my veggie and non sweet fruit meals. But his video gave me some new inspiration as well as motivation. Naturally I wanted to share that here. Today I just used what I had already at home.
In my blender I used...
I used zucchini noodles or Zoodles with one zucchini.
I had a half of a Roma tomato left and I used about four sun dried Roma tomatoes as well.
I also used half of a red bell pepper and one stalk celery.
I didn't have avocados so I used one tablespoon hemp seeds.
Of course juice of half a lemon.
I also added about 1/2 to 1 cup of water.
And for the herbs I used one clove garlic
about six basil leaves and oregano.
For some sweetness I used six pitted dates.
And after I spiralized my zucchini
I had two ends left as shown in next photo
so I threw those in too.
When you add your water don't use too much.
Use less and add as you want to come to the desired consistency.
You don't want this watery. It's marinara.

I blended it well and tasted it to make sure I liked it. Use the flavors that you like and go for it. I decided to do this one an Italian style with the basil and oregano like Tom Avery did in his video.
For the bowl I used my spiralized zucchini, one shredded carrot and some kale that I had on hand.
Once I got my veggies and no sweet fruits together I poured my sauce over the top. I like to give it a good toss to coat everything well. This sauce or Raw Vegan Marinara was pretty good. I think the sun dried tomatoes give it a really good flavor for marinara sauce. I have made raw vegan zoodles with marinara before and love it every time. I think for this one I will do without the kale next time. Since I only had one zucchini I just used what ever greens that I had. I added the carrots for more nutrients as well as flavor.
