Raw Vegan Creamy Cole Slaw

I definitely need more cabbage in my life how about you? 

Now I will with this tasty dressing! 

  I've been trying to eat lots of raw cruciferous veggies. Cabbage is one of those veggies and it turns out pretty good for you too! 

  I am interested in the anti-inflammatory properties of cabbage as well has eye and heart health. Cabbage is also great to help lower cholesterol, aid in digestion, alleviate constipation and has anti-cancer effects.
 
   Certainly, a plant centered mostly raw vegan diet will offer you these benefits as well. But making sure you are getting these super foods into your diet can also be important too!

  Cabbage is one of the cruciferous vegetables like kale, broccoli and Brussels sprouts. I'm trying to eat more raw cruciferous veggies not only for all of the wonderful health benefits but also to lower my thyroid hormones.

 With that said. 

Do you love Cole Slaw? 

I always have and still do.

I wanted to make an easy raw vegan version that I can eat often.

Tradition Cole Slaw calls for mayonnaise, yuck! As well as vinegar. I definitely don't want to use the mayonnaise and I prefer not to use vinegar. 

So...

I created this Easy Raw Vegan Creamy Cole Slaw Dressing, and it turned out great! 

The key to Cole Slaw Dressing I think is the sweetness as well as the creaminess. This easy raw vegan recipe has all of that and made an excellent Cole Slaw!  
For this recipe you will need.

1 half head of green cabbage
1 quarter head of red cabbage 
1 carrot.


  I used a regular sized red and green head of cabbage. Cut the heads in half each and then quarter the red cabbage. You only need a quarter red. If your cabbages are really small you may need to use both complete halves. Usually, Cole slaw has more green cabbage than red and then your shredded carrots. I used a quarter red and a half green for this dressing. 

If your Cole Slaw is too wet after you toss in the dressing, you can always add the other quarter red. I haven't had to do that for myself. 

This dressing recipe will make about 1 cup for your bowel of cabbage. 
Here is what mine looks like before the dressing. I used a big bowel because it helps to toss it without losing it over the edge. 



Chop both your red and green cabbage into strips. 
You know slaw style! Then place your cabbage in a big bowel. 
Grate your carrot and add to the slaw mix...

Set aside and prepare your dressing.

Now for the dressing! 

1/2 cup raw cashews soaked overnight and drained.

In a bender add...

 The 1/2 cup-soaked cashews.
1 clove garlic
Juice of 1 lemon
6 dates
1/4 tsp onion powder
4 tablespoons of water 

       Add your water gradually to reach desired consistency. You shouldn't need more than the 4 tablespoons of water. But if you do add additional tablespoons gradually. Remember not to use too much water. You want this dressing to be thick enough to coat your slaw well without water at the bottom of your slaw. I find that 4 tablespoons water added gradually works perfect for me. Makes about 1 cup of dressing for your slaw mixture.

Blend dressing well and pour over your slaw! 

        Toss with a fork to get your dressing mixed in well. This recipe can be made ahead of time for later. This dish makes a great make ahead meal for work or to go on an outing. 

        If you are preparing it ahead of time you may want to retain the dressing and pour that over when you are ready to eat. I made this and it kept in the fridge for several days. It wasn't dry and was great the next day! 

    This was a sweet and savory dressing for my cabbage slaw. I look forward to making it again and again. This recipe was filling and nutritious! I hope you like it too :) I love this one bowel raw meals myself. They are easy and filling.

Raw Vegan Sesame Ginger Dressing No Oil

If you like sesame ginger dressings, then you're going to love this easy raw vegan recipe!

Raw Vegan Sesame Ginger Zoodles

  I have always loved sesame ginger dressings. In fact, it is one of my favorites! I am often looking up recipes online to use on my own. But most recipes that I find need to be modified to meet my raw vegan dressing standards. 

  A lot of recipes that sound good online call for oil and vinegar. I prefer easy recipes that have whole food ingredients instead.  I find that you get a much cleaner food product when you leave these out. 

       Instead of looking for a Sesame Ginger Dressing I just made one for myself. I am so glad that I did! This dressing is so tasty. It's going to help me eat lots of greens, veggies and non-sweet fruit for years to come! 

Here's another picture of this in a different lighting for your convenience. 


   This recipe goes as one of my goes to meals! 

    For this recipe in particular like you see in the first picture I made a sesame ginger zoodles with carrot. But this dressing recipe can certainly be used in your lettuce-based salads as well. Right now, I am envisioning an oriental style salad with spinach, lettuce and Mandarin orange slices :)

For my Sesame Ginger Zoodle recipe. 
I used...

 1 large zucchini or spiralized 
1 large carrot spiralized


    I feel like the flavors of the carrot goes very well with the sesame ginger dressing as well.
 
I think you will love it! 

Note for if you want to substitute cucumber instead of zucchini.

 I did this recipe with cucumber also which tasted pretty good, but it was too watery. 
I suggest if you use cucumber, make sure to drain out your cucumber. Spiralizing the cucumber brought out a lot of the water. It tasted great but was too watery because I didn't drain it out. Just a note if you want to use a cucumber instead watch your water. You may have to drain it out before you put in your dressing. 

Then I decided to try this dressing with the zucchini and the carrot which turned out so yummy! After I spiralized the items it was not watery for me. This is definitely going to be a normal meal for me to eat regularly. I told my son it was probably one of the best raw vegan recipes that I made!

I have the Oster Spiralizer, so you have to cut the carrot and zucchini in half and then spiralize. This function will depend on the spiralizer you have. I also like to break the Noodles in a bit smaller piece to make it easier to eat. 

My Raw Vegan Sesame Ginger Dressing Recipe
For the dressing I used a small blender that I bought just to make dressings. Any blender will work fine but if you have a smaller size one it works best for small amounts of food like a sauce or dressing. 

In the blender add.

No more than 1 inch piece of ginger skinned
3 tables of raw sesame seeds
Juice of half a lemon
5 pitted dates
1 clove garlic
1/4 cup of water

I say here no more than 1 inch piece of ginger because I know how overpowering ginger can be in a recipe. When I make, I use about a 1-inch piece of ginger, but you may want more or less. I suggest you start with less than 1 inch size and go from there. You can always taste it and add the rest if you need to. 

 I have also added 1 tsp coconut Aminos which gives it a richer taste but is not needed. I have made it without it and love it best that way. I don't like to use processed flavor enhancers if I don't need to. This dressing what great either way! 

   I'm starting with 1/4 cup of water and adding a tsp at a time as needed. With the lemon juice you have enough liquid for this dressing. You don't want this dressing to be watery so add more water gradually until you reach the desired thickness. When making a good dressing you can always add more water, but you can't take it out once you've blending it. 

   I feel the spiralized non sweet fruit and veggies go best with a thicker dressing. I like every bite to be coated. Likewise remember to pay attention to the water in the bowel with your spiralized contents as mentioned. You don't want your zoodles swimming :)

Dressing tips. 

I like to let the seeds soak in my liquids for at least ten minutes for a creamier texture,
I just place my ingredients into the blender. Let everything sit together for a bit. The sesame seeds will soak into the lemon juice and water. During this time, I like to prepare the zucchini and carrots before blending.

Once your dressing is blended you can pour it over your spiralized produce. 
Use your fork and toss until everything is coated. 

Sprinkle with an additional tablespoon sesame seed for more texture.

Raw Vegan Veggie Wraps

My Easy Raw Vegan Recipe, Veggie Wraps!   

  I was inspired to make a raw vegan veggie wrap. My dad grew these greens and they are big hardy leaves. My dad says it's a type of Kale. 
I was already looking at a way to make vegan honey mustard dressing. So I cut up some red bell peppers, avocado, some mushrooms and radishes. 


I made that honey mustard sauce and wrapped it all up in the leaves. Topped with some hemp hearts. I ate about six of these in various sizes until I was stuffed! 

The sauce made all the difference. Honey mustard has always been one of my favorites! This recipe is simple and tasty. Perfect for wraps like this! 

Vegan Not Honey Mustard Sauce Recipe

In a bowel whisk together.

1/4 cup organic Dijon mustard
2 tbs maple syrup
1/4 tsp garlic powder 

And that's it! 

Use in all of your favorite raw vegan recipes like wraps, and salads. 

To make a wrap like this all you need are some big leaves. Use your choice of green leaves. 

Thinly slice bell peppers, avocados, radishes, mushrooms whatever else you like in it.  

This make an easy veggie meal that tasted great!

Raw Vegan Spinach Dip

AUTHENTIC Easy RAW VEGAN SPINACH DIP RECIPE!

 I have been wanting to make this recipe ever since I saw Chris Kendall's video. I been meaning to make it ever since. If you read my Raw Vegan "tuna" Salad recipe post you know that I'm always looking for good dips to get me eating my veggies more often. 

This Authentic Raw Vegan Spinach Dip is one of those recipes! 

 I decided to get on it and make at least one raw recipe every week. I do a lot of smoothies and fruit which I love. But I been trying to get more veggies and greens in my diet as well. 

My dad grew broccoli and cauliflower this season so I been eating that with hummus as a dip. But hummus isn't the best option unless it's a raw vegan version of it. 

So finding myself easy raw dip options is a must!  

Raw Vegan Spinach Dip


I knew when I saw Chris' video below for the first time that I needed a recipe like this in my life. I'm glad I final decided to make it. This one definitely goes down as one of my go to dips! 

For this platter I used..

1 bell pepper, 4 carrots, 1 cucumber, as well as a few radishes and mushrooms. 

I had my Spinach Dip with my veggies like you see in the picture. This made an nutritious and filling meal for me. I am glad I finally put this recipe to the test. 

Check out the video below and Chris can tell you how to make this rawsome dip! I did add a pinch of salt for my taste. Chris didn't say to use salt in his recipe but I added a little pink salt for my taste. 

Other than that this is a great raw vegan spinach dip!

Raw Vegan "Tuna" Salad

Easy Raw Vegan "Tuna" Salad Recipe

 One of my favorite dishes that I have made so far in my journey!

  I'm always looking for a few really good raw staple recipes, to keep me eating the raw nutritious foods that I need. I love to keep it fruit based but add in some mineral rich vegetables as well. My biggest problem with eating raw veggies is that I need a good dip! Without a tasty dip forget about it I don't even try to eat raw veggies. 

Raw Food Recipe

In the above picture my raw vegan "tuna" salad with carrots, green bell pepper, cucumber and celery.

  I am looking for a few more tasty dips but this one is my current favorite. I also like this in romaine lettuce boats shown in the picture below. You can top it with what ever you like! This make a great meal or snack. Sorry about picture quality I just took them with my phone and added it here. 


 I found this Easy Raw Vegan "Tuna" Salad recipe on the Yummly app to start with. I did make a few adjustments. I first learned about raw vegan "tuna" salad when my friend had it with her veggie platter. I decided to make it and I loved it!

The Recipe that I use...

This was 1 cup raw sunflower seeds soaked for 2 hours. 

In a food processor add the soaked and drained seeds

1/2 cup shredded carrots

1/2 cup chopped celery

Juice of half a lemon

1 good size dill pickle chopped

1/2 tbsp. agave syrup

1/4 tsp onion powder 

1/4 tsp paprika

Pinch of salt (I use pink salt) and pepper 

Raw Food Recipes 

Process until you have reached desired consistency. For a dip I like to blend it a bit smoother but if you are eating this in romaine lettuce you may want it chunkier. This recipe taste just like tuna salad in my opinion but without the fishiness. 

This dish tastes clean and it is filling. Sunflower seeds are packed with minerals and nutrient. I myself try to get them in for the high selenium content. Sunflower seeds are also easier to digest than some other seeds or nuts. 

If you soak them they are even easier to digest. I find that my stomach is not bother by them. This is just some of the reasons why I like to have sunflower seeds on hand. Sometimes I put them in a smoothie too. 

Also I should say that if you use this as a dip don't expect it to be creamy or real dip-able. This recipe has a chunky texture even when you blend it more. I didn't want to blend it too much because I thought it would take away the flavors if I did that. 

So it's more of a scoop than a dip lol! 

Sunflower seeds offer plenty of good fats, vitamins, mineral and plant protein. A great base for a raw vegan meal. When you add up all of the veggies too, this meal is packed with nutrition! This made me a filing and nutritious meal :)

This recipe make about 1/2 a pound of mixture. I eat nearly the whole thing with my veggies for a meal or split it up into two. I usually end up sharing some of it with others in my family. But most of it is for me :) In the picture below I have my veggies and Raw Vegan "tuna" Salad mixture ready for me to eat. 

Easy Raw Vegan Tuna Recipes

I prepped my veggies by cutting up 3 carrots, 2 talks of celery, 1 bell pepper and half of a long cucumber. It is a good idea to have food like this prepped so you have an easy meal to go for. Then you won't eat whatever is in front of you that is not too great. This is especially good for those who are also preparing for a family like me. 

If your not a big eater just split this recipe up into two meals with lots of veggies and or romaine lettuce. At 24 grams of protein this can certainly be for two meals or one meal two people. But for a main meal this is great for one person. 

I recently bought 2 pounds of raw sunflower seed just so I can make this recipe more regularly. I need the mineralization of eating my veggies and sunflower seeds. I don't eat them every day but I am trying to get more into doing that. 

This recipe and a few others is how I am going to do it!   

This recipe is also great for make ahead of time meals. I like to prep my food in the morning when I am not eating. That way when I am ready to eat my food is ready and available.
