Raw Vegan Spaghetti Zoodles

Raw Vegan Spaghetti Zoodles


    This is an easy to make Raw Vegan Version of spaghetti with red sauce that I think you are going to love! To make this dish all you need is a blender and a spiralizer. If you don't have a spiralizer than you can use a hand peeler like a potato peeler to make your zoodle strips. 

  I like to peel most of the skin off of my zucchini. I find that the skin makes this too tough for me to eat so I like to peel most of it as you can see in the picture. I also feel like it makes it more like a cooked noodle texture as well. So I just do a rough peel of the skin before I spiralize it. 

You will need

About 2 normal size zucchinis for your Zoodles.
Spiralize or cut into thin strips with a peeler. 
Set aside in a bowel. I like to peel most of the skin off first. 
Makes a more of a noodle texture.

For the dressing, in a blender add...

1 fresh Roma tomato chopped
 3 medium size sun dried tomato 
or 5 small sun-dried tomatoes
3-5 pitted dates
Juice of half a lemon
 1 clove garlic
You also need to add 
Fresh or dry oregano and basil
Start with 1 tsp dry of each 
or 1 tablespoon fresh herbs. 
 Add more if you need to. 
Pinch of salt if desired. 

 Blend adding water as needed to achieve desired consistency. IMPORTSNT, add water slowly, little at a time, you don't want this watery. This recipe works best when the dressing is thick. I think it shows in the picture. This is a very easy dressing to make, and it goes well with the zucchini zoodles. The sun-dried tomatoes as well as the herbs give it that marinara taste without cooking. 

Top your dressing on your Zoodles. 
Toss and enjoy :)

Raw Vegan Bread and Veggie Sandwiches


Veggie Sandwiches with Easy Raw Vegan Bread Recipe 

And No Honey Mustard Drizzle



  I been looking for a good Raw Vegan bread recipe. I love to eat veggie sandwiches without being tempted to use Dave's Bread lol! The bread is the worst part for me. So I decided to try another raw vegan recipe. 

  I have come to see bread as one of the most addicting and worst foods out there. Certainly the better the quality the healthier it could be. I have always favored the 100% whole grain, seedy stuff myself. 

  But even that can be problematic for health, especially if you have sensitivity to gluten and grain. As far as where grain fits into my diet, I prefer whole oats or quinoa if I'm going to have it. Not a fan of the others which can be highly inflammatory and mucus forming. 

  This is the second time trying a raw vegan vegetable based bread. The first one was pretty good but it had parsnip and a different flavor than I'm used to. This one didn't have the parsnip so I wanted to try it. I got this recipe from Heather Page's YouTube Channel. I will include the video below so you can try this recipe out too. 

Easy Raw Vegan Bread
This bread had good taste in my opinion, It was soft and easy to eat. I think I made it a little thicker than Heathers but I didn't want to spread it too thin. I think next time however I will make it thicker and dehydrate longer. I don't have a dehydrator per say but I do have the Emeril Air Fryer that my dad bought. It has a dehydrator setting and works pretty good. One day I will get a good one but this is what I have for now! 


  

This recipe made twelve equal size pieces for me. The Emeril has three baskets and I had to use parchment paper at first until the bread set up after the first step before you flip it over. Then I flipped them over, turned temperature to 120*, and scored them to make four pieces each tray. and went to bed lol! In the morning I put in containers for the fridge, like you see in the picture.

The BEST Veggie Bread (Vegan, Raw, Gluten Free, Paleo)

 

  I pretty much did this same recipe. The only thing I changed was the amount of oil and the flax meal. I don't like to eat oil so instead of the 1/4 cup of olive oil I used just a small drizzle of olive oil. Also I think avocado oil would be better and can be used too. I also used the regular darker flax meal, instead of the gold since that is what I had on hand. Other than that everything else was the same. Watch the video for full recipe and instructions. 


Easy Raw Veggie Sandwiches Recipe
  I layered avocado, tomato, mushroom, and lettuce for my sandwiches. I also drizzled them with No Honey Mustard which was excellent! I folded to make two sandwiches and ate it carefully because it was a little messy :) I should have stuffed them with more greens but I didn't know how it was going to hold together. 

  To make No Honey Mustard sauce just mix mustard with a sweetener like maple syrup, agave or date syrup. For an exact recipe for this sauce see My Veggie Wrap post. 

  These sandwiches were soft and I ate the whole thing which means I like it. When it comes to me it has to taste good or I just won't eat it. I am definitely making this Raw Vegan Flat bread again, and again! 

  Tomorrow I'm going to make My Raw Vegan Cole Slaw again. And then Cole Slaw Veggie Sandwiches!

Raw Food Diet Have A Plan

My Salad and HAVING A PLAN for your raw food!

   I did another short video on my YouTube today about prepping your raw food in the morning for success on a raw food diet. The message here is TO HAVE A PLAN! Your raw food health plan success is possible. It's made easier with a good plan. I know I do my best when I have a plan for my raw food. Got to take the guess work out of it! 

  You know how it is when you find yourself hungry with no idea what you're eating! We usually go for the easy thing in front if us to grab and shove in our mouth. If you want to succeed in a raw or mostly raw vegan diet. Then you need to know what to eat and it needs to be available when you're ready for it. I like to use my mornings wisely and prepare my raw meals. I have a family to prepare meals for as well and they don't eat the same as me. I like my mornings to be for me ❤ 

  So, I use my mornings to prepare my salads and whatever I will be eating for the day. That way it's there for me when I'm ready for it. I can eat my meal and be assured that everyone else is taken care of too. Then I'm not tempted to eat whatever I've made for everyone else. 

  I love to cook vegan mostly for my family but it usually consists of beans or legumes, rice and some bread product. I've always believed in cooking fresh and home made for my family but these foods are not what I need for myself. Not part of a healing journey! I prefer to eat fruit, veggies, greens, seeds and some nuts. I'm not always raw and I am certainly not perfect but I find that having a plan, prepping ahead of time helps me to stay on track. 

  As far a plan for my raw food, my husband and I have a big smoothie about 1:00 afternoon. Later I will do either another smoothie or fresh fruit. And then around 5:00 I want a big salad or a veggie meal with an awesome dressing or dip. I find that if I don't spend time in the first part of the day prepping my salads and raw food then by 5:00 I'm too tired to do it. I tend to get lazy by the time evening comes around and then I just want to put my feet up. This is why a plan and spending time prepping is essential, especially if you are a busy mom like me. 

  For my salads, like the one you see in the picture. I want greens like lettuce, spinach and or kale. I like the spring mix too. I also want lots of nutrient dense raw foods. In this one I got two shredded carrots, shredded red cabbage, one stalk celery chopped small, and chopped broccoli. For the lettuce I used some that my dad grew in his garden. As well as the rest of spinach that I had in the fridge. 

  The dressing can also be prepared in the morning too. Today it's No Honey Mustard which I love! But any raw vegan dressing is good. The point is have a plan, prep your food that way it's ready when you are. Once my stuff is done I can focus in healthy meals for my family. Raw Vegan Sesame Ginger Dressing No Oil

Raw Vegan Sesame Ginger Zoodles

  I have always loved sesame ginger dressings. In fact, it is one of my favorites! I am often looking up recipes online to use on my own. But most recipes that I find need to be modified to meet my raw vegan dressing standards. 

  A lot of recipes that sound good online call for oil and vinegar. I prefer easy recipes that have whole food ingredients instead.  I find that you get a much cleaner food product when you leave these out. 

       Instead of looking for a Sesame Ginger Dressing I just made one for myself. I am so glad that I did! This dressing is so tasty. It's going to help me eat lots of greens, veggies and non-sweet fruit for years to come! 

Here's another picture of this in a different lighting for your convenience. 


   This recipe goes as one of my goes to meals! 

    For this recipe in particular like you see in the first picture I made a sesame ginger zoodles with carrot. But this dressing recipe can certainly be used in your lettuce-based salads as well. Right now, I am envisioning an oriental style salad with spinach, lettuce and Mandarin orange slices :)

For my Sesame Ginger Zoodle recipe. 
I used...

 1 large zucchini or spiralized 
1 large carrot spiralized


    I feel like the flavors of the carrot goes very well with the sesame ginger dressing as well.
 
I think you will love it! 

Note for if you want to substitute cucumber instead of zucchini.

 I did this recipe with cucumber also which tasted pretty good, but it was too watery. 
I suggest if you use cucumber, make sure to drain out your cucumber. Spiralizing the cucumber brought out a lot of the water. It tasted great but was too watery because I didn't drain it out. Just a note if you want to use a cucumber instead watch your water. You may have to drain it out before you put in your dressing. 

Then I decided to try this dressing with the zucchini and the carrot which turned out so yummy! After I spiralized the items it was not watery for me. This is definitely going to be a normal meal for me to eat regularly. I told my son it was probably one of the best raw vegan recipes that I made!

I have the Oster Spiralizer, so you have to cut the carrot and zucchini in half and then spiralize. This function will depend on the spiralizer you have. I also like to break the Noodles in a bit smaller piece to make it easier to eat. 

My Raw Vegan Sesame Ginger Dressing Recipe
For the dressing I used a small blender that I bought just to make dressings. Any blender will work fine but if you have a smaller size one it works best for small amounts of food like a sauce or dressing. 

In the blender add.

No more than 1 inch piece of ginger skinned
3 tables of raw sesame seeds
Juice of half a lemon
5 pitted dates
1 clove garlic
1/4 cup of water

I say here no more than 1 inch piece of ginger because I know how overpowering ginger can be in a recipe. When I make, I use about a 1-inch piece of ginger, but you may want more or less. I suggest you start with less than 1 inch size and go from there. You can always taste it and add the rest if you need to. 

 I have also added 1 tsp coconut Aminos which gives it a richer taste but is not needed. I have made it without it and love it best that way. I don't like to use processed flavor enhancers if I don't need to. This dressing what great either way! 

   I'm starting with 1/4 cup of water and adding a tsp at a time as needed. With the lemon juice you have enough liquid for this dressing. You don't want this dressing to be watery so add more water gradually until you reach the desired thickness. When making a good dressing you can always add more water, but you can't take it out once you've blending it. 

   I feel the spiralized non sweet fruit and veggies go best with a thicker dressing. I like every bite to be coated. Likewise remember to pay attention to the water in the bowel with your spiralized contents as mentioned. You don't want your zoodles swimming :)

Dressing tips. 

I like to let the seeds soak in my liquids for at least ten minutes for a creamier texture,
I just place my ingredients into the blender. Let everything sit together for a bit. The sesame seeds will soak into the lemon juice and water. During this time, I like to prepare the zucchini and carrots before blending.

Once your dressing is blended you can pour it over your spiralized produce. 
Use your fork and toss until everything is coated. 

Sprinkle with an additional tablespoon sesame seed for more texture.

Raw Vegan Veggie Wraps

My Easy Raw Vegan Recipe, Veggie Wraps!   

  I was inspired to make a raw vegan veggie wrap. My dad grew these greens and they are big hardy leaves. My dad says it's a type of Kale. 
I was already looking at a way to make vegan honey mustard dressing. So I cut up some red bell peppers, avocado, some mushrooms and radishes. 


I made that honey mustard sauce and wrapped it all up in the leaves. Topped with some hemp hearts. I ate about six of these in various sizes until I was stuffed! 

The sauce made all the difference. Honey mustard has always been one of my favorites! This recipe is simple and tasty. Perfect for wraps like this! 

Vegan Not Honey Mustard Sauce Recipe

In a bowel whisk together.

1/4 cup organic Dijon mustard
2 tbs maple syrup
1/4 tsp garlic powder 

And that's it! 

Use in all of your favorite raw vegan recipes like wraps, and salads. 

To make a wrap like this all you need are some big leaves. Use your choice of green leaves. 

Thinly slice bell peppers, avocados, radishes, mushrooms whatever else you like in it.  

This make an easy veggie meal that tasted great!

Raw Vegan Spinach Dip

AUTHENTIC Easy RAW VEGAN SPINACH DIP RECIPE!

 I have been wanting to make this recipe ever since I saw Chris Kendall's video. I been meaning to make it ever since. If you read my Raw Vegan "tuna" Salad recipe post you know that I'm always looking for good dips to get me eating my veggies more often. 

This Authentic Raw Vegan Spinach Dip is one of those recipes! 

 I decided to get on it and make at least one raw recipe every week. I do a lot of smoothies and fruit which I love. But I been trying to get more veggies and greens in my diet as well. 

My dad grew broccoli and cauliflower this season so I been eating that with hummus as a dip. But hummus isn't the best option unless it's a raw vegan version of it. 

So finding myself easy raw dip options is a must!  

Raw Vegan Spinach Dip


I knew when I saw Chris' video below for the first time that I needed a recipe like this in my life. I'm glad I final decided to make it. This one definitely goes down as one of my go to dips! 

For this platter I used..

1 bell pepper, 4 carrots, 1 cucumber, as well as a few radishes and mushrooms. 

I had my Spinach Dip with my veggies like you see in the picture. This made an nutritious and filling meal for me. I am glad I finally put this recipe to the test. 

Check out the video below and Chris can tell you how to make this rawsome dip! I did add a pinch of salt for my taste. Chris didn't say to use salt in his recipe but I added a little pink salt for my taste. 

Other than that this is a great raw vegan spinach dip!

My Green Goddess salad | Raw Food Recipes

 I decided to try the Green Goddess salad!

   I saw it first on My Healthy Dish YouTube channel. 

This is an Easy Raw Vegan Recipe that you are sure to love.

I am always looking for ways to eat more raw green foods. I looked up a few versions of this salad but decided to make my own version out of what I already had in the fridge. I think it turned out pretty good so I am documenting it here for those who want to try. You can customize it to what you like and to what you have in your fridge. Bottom line is use what you have, make it taste good and eat it lol! 



First I made my dressing;

I used my small blender that I bought for making dressings. I have a Vitamix but it is too big for my dressings. If I was making a larger amount I would use my Vitamix. In this case I was only making enough for one meal. See the Kitchen Ware Must Have Items page for the blender the I use.

In a blender use; 1 clove garlic, about 3 tablespoons worth of chives, 1 stalk of celery, and a little bit of ginger. When using garlic and ginger use what you like, both these herbs can be very overpowering. And, 1/2 cup soaked cashews, the juice of 1 lemon, 2 dates and a bit of water to thin it out a little. Use water carefully so that you can add it as needed. 

You can make it as thick as you want! 

Make sure to soak your raw cashews for about 15 minutes before using. This will make a creamier dressing for your greens and easier to digest. Blend and set aside :) 

For the salad I used; 

1 cucumber, 1 zucchini, a decent handful of spinach, 1 stalk celery, a little over 1 cup raw broccoli chopped and and 1/2 cup some chicory we had growing in the garden. Honestly the chicory was very bitter so I didn't use too much. Some romaine or iceberg lettuce would have been better. You can use lettuce, and whatever else you like. For the amount of dressing that this recipe made, it was about six cups of salad material in my bowel. 


I then poured the dressing over the salad and mixed it up well. I like it when it's all mixed together. 
I like my salads coated well with the dressing. So it turned out to make about 1 cup of dressing and like I said the salad material was a out 6 cups. This dressing was pretty good for me and a fat based dressing is the best when you are eating greens. I feel like the fat helps the greens go down and make it more palatable for me. It also breaks up the acidity of the lemon. For those who are watching your sugar you may omit the dates in this recipe. I did not use any salt or additional spices. 
       It took me about an hour to eat this since I took my time and was creating this blog post. But it was a satisfying salad and I didn't need to run to the store to buy anything. If you don't have cashews on hand try hemp hearts, soaked walnuts or even avocado will do. There is certainly many ways to make a green goddess salad. Look up some recipes and use what you have. 

          You can always substitute lemon or lime juice for vinegar, and whatever fat that you want to use. I personally avoid oils and find it much better to use a whole avocado instead. I also avoid salt so I didn't add any of that, since the celery is a great salt substitute. I liked this salad pretty well, and I was able to get these greens in me. It was also very filling and I did not feel a craving for anything else. 

A win, win for sure! 

This day I fasted until noon as usual, with the exception of lemon water first thing in the morning, then at noon I ate a good sized 6 banana and 1 tablespoon cacao smoothie. Until early evening when I made this salad. I took my time eating it and other than a few oranges will be my last meal. I try to keep things simple and light. The cashews was my fat for the day but I try not to eat that much fat every day. Like I said it does help with eating greens quite well, and I do need to eat more greens.

When it comes to a successful raw diet adding greens in the form of smoothies, juices, and salads is a must for satisfying meals that you don't find yourself wanting anything else. Green vegetable and fruits like I made here in this salad will give you many nutrients that you need. Not to mention filing!
